Instant Pot Garlic Chicken
 
 
Quickly cook bone-in chicken in an instant pot for shredded chicken you can use throughout the week in dinners and lunches.

Ingredients
  • 2 lbs. bone-in chicken breasts or chicken thighs, or a combination.*
  • 2 Tablespoons olive oil
  • 1 cup low sodium chicken broth
  • 1 head garlic, cut in half
  • Salt and pepper
Instructions
  1. Generous season the chicken with salt and pepper.
  2. Select "Saute" and "More" on the Instant Pot, add olive oil.
  3. Once oil is shimmering (a drop of water flicked into the pot immediate sizzles), add chicken, skin side down.
  4. Brown chicken until golden and turn to brown the other side.
  5. Press "Cancel" on the Instant Pot
  6. Carefully add broth and garlic to just cover the chicken. Add more water, if necessary.
  7. Fasten lid, press "Pressure Cook" on "High" and set timer to 12 minutes.
  8. Let pressure naturally release for 10 minutes then manually release (see Instant Pot directions)
  9. Remove chicken to a plate and let cook a few minutes. Using two forks or your hands, shred chicken off the bone and toss the bones. Go through meat carefully to ensure all little bones are removed.
  10. Using a slotted spoon, remove garlic halves. Gently press to separate cloves from skin. Mash garlic cloves and discard the skins.
  11. Strain chicken broth and add garlic cloves. Reserve or freeze broth for another recipe.

Notes
*Chicken thighs traditionally have a richer flavor. If your family likes dark meat, this would be a great choice. It's less expensive, too.
