Spanish Chicken Bake
 
 
This is more of an assembly of ingredients than a recipe. The following is a suggestion to serve 4 but is easily adapted.
Ingredients
  • (1) organic chicken, in parts
  • 3 Large russet potatoes, cut into long spears
  • 1 large Spanish onion, sliced into thick ½” slices
  • 2-3 large red bell peppers, sliced into long spears
  • 2-3 teaspoons smoked paprika
  • 2-3 Tablespoons olive oil
  • salt and pepper to taste
Instructions
  1. Preheat oven to 400 degrees.
  2. Place the chicken, potatoes, peppers, onion into a large baking pan. Coat everything with a slick of olive oil.
  3. Sprinkle with salt and pepper and toss to combine.
  4. Sprinkle with a dusting of the smoked paprika.
  5. Place into the oven and roast for about 30 minutes, baste with the juices and continue to roast until the internal temperature registers at least 160 degrees, about 30 minutes more.
