Za’atar Roasted Mushrooms and Eggplant with Barley and Tomatoes

Unseasonably warm temperatures suggest summer while the calendar and market options are becoming decidedly autumn.  Blending the seasons seems to be the best strategy this week.  Za’atar Roasted Mushrooms and Eggplant with Barley and Tomatoes marries summer and autumn for a filling meal that straddles the seasons with ease.

Mushrooms in all their mossy earthiness are an autumn star but I also find at the market a basket of baby purple and white striped eggplant so both are roasted in a heady za’atar spice blend.  The powerful aroma suggests the deep heat of summer.

Tomatoes are still making an appearance at the market.  This late-season crop has been soaking in the sun and I find they have a deep, ripened flavor that, to me, is very different from the fresh mid-July tomatoes.  I chop some leftover plum tomatoes but cherry tomatoes work well, too, and still appear to be plentiful at the markets.  They are lovely sliced raw but I throw them under a broil for a few minutes to char.

The barley is tossed with softened shallot and garlic to brown a bit in the pan before adding the water.  I think the light toasting gives this nubby grain a deeper flavor and heartier texture.

To complete the dish, the spiced mushroom and eggplant mixure is given a quick toss with the cooked barley, tomatoes and an extra swirl of olive oil.  I don’t find any additional seasoning necessary but you might want to add an additional sprinkle of za’atar.

Slightly chewy, richly aromatic and deeply satisfying, I find this dish just as enjoyable hot as it is warm or even cold.  It’s decisive in flavor but flexible in temperature and seems well suited for these mid-September market days.

Za'atar Roasted Mushrooms and Eggplant with Barley and Tomatoes

Fall mushrooms and eggplant roasted with za'atar are tossed together with late-season tomatoes and barley for a late-summer early fall dish.

Ingredients
  • 2 cups baby eggplant, chopped in ½ cubes (or regular eggplant, peeled)
  • 6 oz. porcini mushrooms
  • 8 oz. cremini mushrooms
  • 2-3 Tablespoons Za'atar spice blend (or your favorite spice blend with thyme)
  • 4-6 Tablespoons olive oil, divided
  • 1 large shallot, peeled and diced.
  • 2 cloves garlic, peeled and chopped
  • 1 cup pearl barley
  • 3 cups water
  • ¼ teaspoon salt
  • 1 cup tomatoes (seeded and chopped or cherry tomatoes sliced)
Instructions
  1. Preheat oven to 400 degrees.
  2. Prep mushrooms by cutting off rough stem and quartering (halving if mushrooms are small)
  3. On a large sheet pan, toss mushrooms and eggplant with 2-3 Tablespoons olive oil to coat and dust with 2-3 Tablespoons za'atar until all the vegetables are lightly coated.
  4. Roast in the oven for about 15-20 minutes until vegetables are tender and slightly browned.
  5. Meanwhile, heat remaining olive oil (enough to lightly cover bottom of the pan) over medium heat in a medium saucepan. Add shallots and sauté until soft and translucent, about 5 minutes. Add garlic and heat for 30 seconds.
  6. Add barley and stir to coat with olive oil mixture. Keep stirring over medium heat until barley lightly browns. Add water and bring to a boil over high heat.
  7. Reduce heat to low and gently simmer uncovered according to directions, usually about 30 minutes. Keep an eye on barley to ensure there is enough water. Different barley cooks at different rates, consult directions. Add more water if necessary.
  8. Once barley is softened, add roasted vegetables and tomatoes. (raw or broil for a few minutes until blistered)
  9. Drizzle with olive oil, toss gently and taste for seasoning. Add more salt, pepper or za'atar, as necessary.

It time to show our love to an often overlooked wi It time to show our love to an often overlooked winter farmers market staple, the sturdy (and you might say studly) cabbage.  Even during the coldest months, cabbage makes a strong showing in a winter farmers market. While it is often overlooked, this versatile vegetable is packed with valuable vitamins and minerals and can sub into so many dishes depending on your mood (or desire). We shred red cabbage and enjoy raw in a salad with a light white vinegar vinaigrette, chopped parsley and roasted walnuts.  Other times, we shred red and/or white cabbage and toss into a quick stir fry. (We add walnuts to that, too.) Even if we don't use our cabbage right away, it stays reliably sturdy and fresh in the fridge until you decide to show it some well deserved attention.  Sturdy, reliable and there when you need it, what more can you ask for? This was our Sunday family lunch @haaitza. We arr This was our Sunday family lunch @haaitza.  We arrived earlier than check-in so we walked across the street for a family lunch at the hotel’s cafe. Although delicious, it wasn’t the finest meal of our journeys (that would be impossible to narrow down) but its simplicity and the opportunity to share the meal together as a family made it special. Roast garlic chicken with fresh green beans, salad and a plate of frites to share together. Relaxed, simple but chic and convivial in every sense. The hotel kindly rushed to ready our rooms but we could have stayed here all day. Spring greens are in full bloom at the farmers mar Spring greens are in full bloom at the farmers market this week.  So excited to find garlic scapes (far right). They are almost only available at the farmers market. I keep finding new ways to enjoy these gems and will share more ideas soon.  I also found beautiful broccoli flowering sprouts that I plan to sauté with some chopped garlic scapes.  Vegetables that grow together tend to taste great together, too. This week at the market it’s all about the ramps This week at the market it’s all about the ramps!  Grab them while you can....their season is very short but, for me, their appearance marks the start of spring.  Ramps are a delicate balance of garlic and spring onion and can be used in their entirety...leaves and bulbs.  Chop and sauté to add to an omelette.  Make a pesto in the blender by adding a handful of walnuts, olive oil, a pinch of salt and pepper then thicken with some parm cheese.  Or, char a bit on the grill just before serving as a side dish.
